In October 2023, we profiled Erika Moreno, the founder of BB Cakes in Blair, Nebraska. At that time, Moreno was balancing her roles as a single mother of four, full-time Compliance specialist, and home baker. Now, in 2024, we’ve followed up with Moreno to discuss the evolution of her business.
While Moreno previously expressed interest in opening a physical bakery, her plans have shifted. “At this time I am not looking at opening up a shop,” Moreno states. “I would like to wait for my youngest to graduate before I can take that step.” This decision aligns with her ongoing focus on family responsibilities.
Despite postponing expansion plans, Moreno continues to innovate. She has introduced new flavors to her lineup, including Fried Ice Cream, Hummingbird, and Banana Split cheesecakes. These additions demonstrate Moreno’s commitment to developing unique flavor profiles.
Moreno maintains her approach to balancing work and family commitments. “I am still able to juggle everyday life as a single mother with a full-time job as well as my passion,” she explains. Her strategy involves limiting orders to ensure timely delivery without compromising on quality or her primary employment.
Regarding her goal to create a multi-layered wedding cheesecake, Moreno reports progress. “I have taken a class under a cake maker on how to stack cakes,” she says. “I will be making a stacked cheesecake this fall and will post the results.” This development could expand BB Cakes’ offerings for special events.
To reach more customers, Moreno plans to offer individual slices for sale in September. “I will try to offer one flavor and one specialty a week to allow people to have a chance of tasting without buying an entire cheesecake,” she notes. Additionally, she continues to provide mini cheesecakes for events, which she reports are popular.
Moreno emphasizes her ability to create custom flavors upon request and advises early ordering for the holiday season due to increased demand. She directs interested customers to her Facebook page, BB Cakes-Cheesecake Omaha, for examples of her work.
BB Cakes has earned glowing reviews from satisfied customers. Monika Vazquez highly recommends the business, stating, “I ordered a red velvet cheesecake and my husband absolutely loved it. It was beautifully decorated and the vanilla cheesecake was creamy and red velvet cake was on point.” Veronica S. Clark raves about the variety, noting, “All of them have been DELICIOUS, but so far the banana cream cheesecake is my absolute favorite!” She also praises the mini cheesecakes as “A great way to sample 4 flavors at one time!” Rodrob Ritenour shared a celebratory experience: “Got 2 cheesecakes for the 4th of July weekend… Everyone loved them and the other desserts weren’t eaten.”
While some of Moreno’s initial plans have been adjusted, her dedication to quality baking and serving her community remains constant. BB Cakes continues to operate as a home-based business in Blair, adapting to meet both personal and market demands.
